Spicy Pasta Salad With Smoked Gouda, Tomatoes and Basil

Ingredients
  • 12 oz Penne pasta, Gluten Free if needed
  • ½ cup Mayonnaise
  • ¼ cup Milk
  • ¼ cup white vinegar
  • ½ tsp salt
  • Freshly ground pepper
  • 1½ teaspoons Adobo sauce from a can of chipotles
  • 1 10 oz package grape tomatoes, halved lengthwise
  • ½ pound smoked Gouda cheese, cut into small cubes
  • 24 fresh basil leaves, thinly sliced
Instructions
  1. Cook the pasta per the instructions on the box.
  2. Drain and rinse the pasta with cold water, until it's cool to the touch.
  3. Dressing:
  4. In a small bowl, mix the mayonnaise, milk, vinegar, ½ teaspoon salt, pepper to taste and the Adobo sauce.
  5. In a large bowl, add the pasta, dressing, tomatoes, smoked Gouda, and basil stir until combined.
  6. Flavor with salt and pepper to taste.
  7. Chill for at least 2 hours before serving.
  8. Enjoy!

Step 5: Flavor with salt and pepper to taste.

Step 6: Chill for at least 2 hours before serving.
