I was looking for a quick and easy recipe last weekend for the Ohio State game.   I had Kielbasa and Pineapple available and I didn’t want to go to the store.  This recipe is really easy and was great for having people over for the game and would be great for tailgating.  This recipe would also be really easy to double and triple for bigger groups.  Kielbasa is usually on-sale or pretty cheap even not on sale.

 Something about drinking makes you want to eat salty meats, so this recipe is great for a big drinking crowd for any sports game.

This is a naturally gluten free recipe and would be great for anyone with a gluten allergy or celiacs.  Enjoy and let me know what you think in the comments.

Kielbasa and Pineapple

Ingredients
  • 1 14 oz package Kielbasa, sliced in ½" -3/4" slices
  • ½ cup salsa
  • 20 oz can Pineapple Chunks, save half of the juice
  • ¼ c brown sugar, lightly packed
  • 8" x 8" baking dish
Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a medium bowl, add the salsa, pineapple juice, and brown sugar. Stir until combined and all of the brown sugar lumps are gone.
  3. Put the kielbasa slices and salsa mix in an 8" x 8" baking dish and stir until mixed.
  4. Bake uncovered for 40 minutes, stirring every 15 minutes.

 

Ingredients:

1 14 oz package Kielbasa, sliced in 1/2″ -3/4″ slices
*1/2 cup salsa
**20 oz can Pineapple Chunks, save half of the juice
1/4 c brown sugar, lightly packed
8″ x 8″ baking dish

*The type of salsa you use will determine the heat of the dish.  Medium salsa makes a great slightly hot dish

**You could use a can of Pineapple Slices and just cut into chunks

Instructions:
